FUN FACT… Today is Gingerbread Day! When I think of gingerbread, my mind automatically thinks of gingerbread men… and Shrek. Using this helpful thing called the internet, I discovered that there are lots and lots of different ways you can incorporate gingerbread into your holiday baking.     Yum! I love gingerbread. I’ll probably be making several of these, but the first one I clicked on was the Sweet Potato Gingerbread Pancakes!
